Steps:

  1. Snap off woody ends of asparagus. Using a Japanese Vegetable Turning Slicer or dedicated asparagus peeler, create uniform ribbons or thin continuous sheets. Blanch ribbons and whole peeled spears for 45-60 seconds in salted boiling water, then shock in ice bath and pat completely dry.
  2. Brush each asparagus ribbon with clarified butter, season with sea salt, white pepper, and finely chopped tarragon. Layer tightly in a rectangular terrine mold or ring molds lined with parchment, alternating direction to create 40-50 precise layers.
  3. Cover with buttered parchment and vacuum-seal the mold in a chamber vacuum sealer on high pressure to compress and bond the layers.
  4. Cook the sealed pavé in a precision immersion circulator at 82°C (179.6°F) for 25-30 minutes. Shock in ice bath, then refrigerate under a 1-2kg weight for at least 4 hours, ideally overnight.
  5. Prepare brown butter sabayon: Brown 100g butter until nutty. Whisk egg yolks with white wine, lemon juice, and salt over a bain-marie until tripled in volume. Slowly incorporate brown butter. Pass through a fine chinois. Transfer to the Gourmet Whip, charge with 1-2 N2O canisters, and hold warm at 60°C.
  6. Sauté morels in clarified butter with minced shallot over high heat until golden. Season lightly and keep warm.
  7. Unmold the chilled pavé and cut into clean 2-inch rectangles. Sear two sides in a hot carbon steel or copper pan with clarified butter until deep golden and glass-like crisp.
  8. Plating: Place the seared asparagus pavé off-center on a pristine white plate. Dispense a delicate cloud of warm brown butter sabayon beside it. Arrange sautéed morels artistically, crown with caviar, Meyer lemon zest, micro tarragon/chervil, and Maldon flakes. Finish with optional white truffle oil.
