Steps:

  1. Prepare the Fresh Agnolotti dough and filling.
  2. Prepare the Burnt Shallot Consommé and clarify until crystal clear.
  3. Prepare the Brown Butter Pearls using the anti-griddle.
  4. Prepare the Parmigiano Foam and keep warm.
  5. Cook agnolotti in heavily salted boiling water for 90 seconds.
  6. Arrange agnolotti in a shallow bowl with brown butter pearls and foam.
  7. Finish with shaved black truffle, micro herbs, olive oil, and flaky salt.
  8. Pour hot consommé tableside beneath a smoked glass cloche before serving.

  1. Combine flour, eggs, yolks, olive oil, and salt into a smooth pasta dough.

  4. Clarify using whisked egg whites and strain through a chinois étamine.
  5. Reduce slightly until intensely aromatic.

Brown Butter Pearls
