Ingredients:
- 2kg – Live Blue Mussels (scrubbed and de-bearded)
- 200ml – Dry White Wine (Chablis preferred)
- 3 – Shallots (finely minced)
- 1 – Bouquet Garni (thyme, bay leaf, parsley stems)
- 500ml – Heavy Cream (minimum 40% fat)
- 0.5g – Premium Persian Saffron (threads)
- 2g – Soy Lecithin (for foam stability)
- 1g – Xanthan Gum (for foam texture)
- 100g – Fresh Sea Beans (Salicornia)
- 2 – Finger Limes (citrus pearls)
- 4 sheets – Edible Bronze Leaf (for garnish)

Steps:
- Sweat shallots in a heavy-bottomed pot without color. Increase heat, add mussels and wine, cover, and steam for exactly 3 minutes.
- Strain immediately, reserving all liquor. Deshell mussels and store in a small amount of liquid to maintain moisture.
- Pass the liquor through a fine-mesh chinois lined with a coffee filter. Reduce by half on an induction system.
- Add heavy cream to the reduction and simmer until the sauce coats a spoon. Hold at exactly 70°C using the Control Freak to maintain emulsion.
- For the foam: Combine 200ml reserved liquor, saffron, lecithin, and xanthan gum. Use the Sonicator for 90 seconds to extract color and create a permanent emulsion.
- Compress sea beans: Place sea beans and 1 tbsp liquor in a vacuum bag. Use the Chamber Vacuum Sealer on high to infuse flavor and alter texture.
- Plate: Arrange 5-7 mussels in the center of a warmed bowl. Pour the velouté around the base.
- Garnish with compressed sea beans and finger lime pearls.
- Finish by spooning the sonicated saffron foam over the top and adding a fragment of bronze leaf.
