Steps:

  1. Weigh all ingredients precisely using the digital kitchen scale.
  2. Toss 300g mushrooms, onion, 2 garlic cloves, and carrot with olive oil, salt, pepper, and spices. Roast at 200°C (400°F) for 20–25 minutes until deeply caramelized. Reserve roasting juices.
  3. Pulse the roasted vegetables with mashed beans, quinoa, walnuts, miso, tomato paste, and flax binder in a high-powered food processor until cohesive but textured. Chill 30 minutes.
