Steps:

  1. Place shredded oxtail in the center of the plate.
  2. Pipe or spoon corn espuma around or over the meat.

Oxtail Barbacoa

Ingredients:

Steps:

  1. Preheat oven to 300°F (150°C) or prepare slow cooker.
  2. Season oxtail with salt and pepper. Sear in oil until browned on all sides.
  3. Remove meat, sauté onion and garlic in the same pan.
  4. Add chile puree, cumin, and paprika; cook 1–2 minutes.
  5. Return oxtail to pan, add stock and bay leaves.
  6. Cover and slow-cook in oven or slow cooker 6–8 hours until meat is tender and falls off the bone.
  7. Shred meat gently and keep warm.

Corn Espuma

Ingredients:

Steps:

  1. Blend corn, milk, cream, sugar, and salt until smooth.
  2. Strain through fine mesh.
  3. Heat gently and add gelatin (if using) to stabilize.
  4. Transfer to a foamer to create espuma.

Lime Gel

Ingredients:

Steps:

  1. Mix lime juice, water, sugar, and agar-agar.
  2. Bring to a gentle boil for 1–2 minutes, stirring constantly.
  3. Pour onto a tray and chill until set.
  4. Blend to a smooth gel or cut into small cubes for plating.
