Steps:

  1. Spoon quinoa risotto onto the center of a warm plate.
  2. Arrange roasted Jerusalem artichokes elegantly on top.
  3. Add dots or a swirl of black garlic purée around the plate.
  4. Finish with micro herbs and a drizzle of olive oil.

Quinoa Risotto Base

Ingredients:

Steps:

  1. Heat olive oil in a risotto pan over medium heat. Add shallots and cook until translucent.
  2. Add rinsed quinoa and toast lightly for 2–3 minutes.
  3. Deglaze with white wine and reduce until nearly dry.
  4. Add warm vegetable stock one ladle at a time, stirring occasionally until quinoa is tender and creamy (about 20 minutes).
  5. Finish with butter and Parmesan (or vegan substitute). Season to taste with salt and pepper.

Roasted Jerusalem Artichokes

Ingredients:

  1. Preheat oven to 200°C (400°F).
  2. Toss artichokes with olive oil, thyme, salt, and pepper.
  3. Roast for 25–30 minutes until golden and tender.
  4. Remove thyme sprigs before plating.

Black Garlic Purée

  1. Blend black garlic, olive oil, and lemon juice, adding water gradually until smooth and glossy.
  2. Pass through fine mesh strainer for an ultra-smooth texture.
  3. Keep warm or gently reheat before serving.
