Steps:

Quinoa Risotto Base
Ingredients:
- 250 g – White quinoa (rinsed)
- 2 tbsp – Olive oil
- 2 – Shallots (finely chopped)
- 100 mL – Dry white wine
- 600–700 mL – Vegetable stock (kept warm)
- 30 g – Unsalted butter or olive oil (for finishing)
- 30 g – Parmesan or vegan alternative (finely grated)
- Salt (to taste)
- White pepper (to taste)
Steps:
- Heat olive oil in a risotto pan over medium heat. Add shallots and cook until translucent.
- Add rinsed quinoa and toast lightly for 2–3 minutes.
- Deglaze with white wine and reduce until nearly dry.

Roasted Jerusalem Artichokes
Ingredients:
- 400 g – Jerusalem artichokes (washed and halved)
- 2 tbsp – Olive oil
- 2 – Thyme sprigs
- Salt (to taste)
- Black pepper (to taste)
Steps:
- Preheat oven to 200°C (400°F).
- Toss artichokes with olive oil, thyme, salt, and pepper.
- Roast for 25–30 minutes until golden and tender.
- Remove thyme sprigs before plating.
Black Garlic Purée
Ingredients:
- 6–8 – Black garlic cloves
- 50–80 mL – Water or vegetable stock
- 1 tbsp – Olive oil
- 1 tsp – Lemon juice
- Salt (to taste)
Steps:
- Blend black garlic, olive oil, and lemon juice, adding water gradually until smooth and glossy.
- Pass through fine mesh strainer for an ultra-smooth texture.
- Keep warm or gently reheat before serving.
