Herb Crusted Crown Roast of Lamb

Ingredients:

Steps:

  1. Season lamb with salt and pepper.
  2. Vacuum seal with lamb fat and cook sous vide at 131°F (55°C) for 90 minutes.
  3. Blend herbs, breadcrumbs, lamb fat, and ground juniper berries.
  4. Sear lamb and brush with Dijon mustard.
  5. Form into a crown roast and coat with herb crust.
  6. Roast at 425°F (220°C) for 8–10 minutes.
  7. Rest 10 minutes before carving.

Smoked Pea Purée

Yield: 4 servings

  2. Blend with cream and butter until smooth.
  3. Pass through a fine chinois.
  4. Cold smoke with applewood for 5 minutes.

Madeira Lamb Jus

  2. Add stock, Madeira, thyme, and tomato paste.
  3. Simmer 4–5 hours.
  4. Strain and reduce until glossy.
  5. Finish with cold butter.
